Huevos Salseados

Huevos Salseados with Pork Chile Verde

Huevos Salseados are eggs served with sauce left over from a guisado (stew). I'm not sure how widely used the term is - we first came across it at Super Cocina, a fantastic home-style Mexican restaurant we are fortunate to have here in San Diego. While their main business is serving a variety of guisados for lunch and dinner, for breakfast they will take the sauce from any of the stews and serve it with eggs.

It is a great idea, and something we like to do at home as well. The dish above is using leftover Pork Chile Verde. This is what it looked like when we had it for dinner the first time:

And we've also been know to do something similar with leftover curry - in this case, Khima:

Any saucy, stewy dish that was good the first time around is likely to be even better for breakfast with some eggs.

  3. I could have swore my comment got posted the first time but if this is a dupe, sorry! What a great idea for the egg and leftover stew. I still have a bit of the beef stew leftover to make this for tomorrow morning's breakfast.

  4. Hi Carol - definitely give it a try. It is a nice way to use up a bit of leftovers that aren't enough for a meal on their own.

  6. I've not heard of this dish before either, but it sure sounds tasty. I'm a big fan of huevos rancheros and will often poach eggs in a little salsa verde. Thanks for sharing!

  7. Hi Dave - huevos rancheros is on the regular rotation here at our house, too, as are eggs in salsa verde. My personal favorite are huevos divorciados - one egg with red sauce, and one with green.

  9. Pibil is one of our most favorite "special" meals - but we always make nine times too much and can't finish it all without burnout. Love your eggs above (Huevos Salseados), but asking a question brought of bad memory and ignorance. The color in the middle looks to me like onions that mixed paths with pickled beets. What is that/where did it come from?

  10. Hi Nora - those are just some red onions that are quick-pickled in citrus juice. The recipe for them comes from Rick Bayless' Pibil in Mexico One Plate at a Time.
