Some Dishes with Fishes
What with it being Fish! Week next week in San Diego, it seems appropriate to post some pictures of recent fish dinners. For a month or so now, we've been getting fresh, locally caught (primarily from Baja California) fish and shellfish every week from Catalina Offshore Products. The quality has been great, and we've really enjoyed eating more fish, so I fully expect this new tradition to continue.
Mano de Leon scallop. Snap peas, beans and beet green stems. Warm potato salad with bacon.

Can you post these recipes, especially the sichuan halibut. These dishes look amazing, I love local seafood. I like Catalina Offshore, but also check out Poppas at the local farmer's markets.

ReplyDeleteHi Jeff - most of it is recipeless, I'm afraid. The sichuan halibut was a riff on Fuschia Dunlop's ma po dou fu recipe (which is very good). You can find the recipe here. The tuna dish with blood orange and fennel is from The Balthazar Cookbook, which has some fantastic fish dishes in it. The tuna confit method we used for the salad is something we've done a number of times now - we'll likely do a full post on the technique at some point.
ReplyDeleteCarol - we used a beer batter for the grouper. We're still not very good at making fish and chips, but this batch turned out very nicely.

Yes - they are located here in San Diego. Their address is 5202 Lovelock St - a bit west of the south end of Morena Blvd.
ReplyDeleteYou can phone in an order for pick up, or you can go there between 9 and 2 on weekdays (and I think until noon on Saturday) and they will take you back to pick out what you want. Note that it is cash only on orders under $25.
wow this all looks so good. the sichuan dish reminds me of ba ren...and how much i miss it! i'm not sure if i've already asked you this, but what kind of camera do you guys use?
